Vibrant Summer Salad

Another favourite salad of ours is Butternut Squash, Feta and Pomegranate... delicious!

Chop your butternut squash into small chunks and cook in the oven until soft. Lay out a bed of spinach, rocket or your favourite green leaves for the base of your salad. Cut your feta into chunks or crumble over butternut squash once it's finished cooking and is cold.  Sprinkle your pomegranate seeds on top for a pop of extra colour... enjoy!

Despite it's sweet taste, butternut squash has a low glycaemic index, so it's great at regulating blood sugar.  It protects the heart, supports healthy digestion and optimises eye health.

 

BUTTERNUT SQUASH contains;

Vitamin A -

Vitamin C - crucial for immune defence and skin repair

Potassium - supports blood pressure regulation

Magnesium - essential for bone density and muscle function, also a relaxant

Vitamin E - fat soluble antioxidant that protects cell membranes

 

FETA contains;

Protein - a high quality complete protein promoting feeling full

Calcium - for bone health

Riboflavin - converts food to energy, essential for cellular growth, development and overall tissue function

B12 - supports nervous system, produces red blood cells and synthesizes DNA

POMEGRANATE contains;

Antioxidants - an antioxidant powerhouse!  The polyphenols in pomegranates neutralize free radicals and reduce inflammation

Fibre - promotes steady digestion, regulates blood sugar and feed beneficial gut bacteria

Vitamin C - immune support

Vitamin K - for blood clotting and strong bones

Folate (B9) - helps form DNA, produces red blood cells and repairs cells.  Deficiency can cause fatigue, weakness and anaemia

 

GREEN LEAVES

Spinach is a nutritional powerhouse packed with Vitamin A, C, K & B9.  Highly rich in iron, calcium, lutein and zeaxanthin, which support vision, bone health and healthy blood circulation

Rocket and other green leaves provide similar vitamins and minerals to spinach.

Simply enjoy on it's own or serve with chicken, fish or a BBQ!
